Abstract

The chapter delves into the critical issue of food waste in supply chains, highlighting the significant contribution of transportation and storage. It introduces Digital Twins (DT) as a transformative solution for dynamically optimizing distribution strategies, enabling real-time data integration and predictive modeling. The proposed DT-based method is showcased through an exploratory case study on beef distribution in the UK, demonstrating substantial reductions in waste, fuel consumption, and waiting times. The use of AnyLogic for modeling and simulation is emphasized, providing a comprehensive toolkit for implementing and evaluating DT-enabled distribution strategies. The chapter concludes with a call for further exploration of DT applications in various supply chains, underscoring the potential for widespread adoption in enhancing sustainability and efficiency.
