Abstract

The chapter delves into the optimization of inventory management in a bakery setting by employing the Holt-Winters additive method for demand forecasting. It compares two distinct inventory management policies—the continuous review model and the periodic review model—to evaluate their effectiveness in reducing costs and ensuring optimal service levels. The study uses historical data from a Portuguese bakery to simulate and quantitatively compare the results of these policies against the current inventory costs. The analysis highlights significant cost reductions and provides insights into the practical application of these models in a real-world context, making it a valuable resource for professionals seeking to enhance inventory management practices.
