Abstract

The study investigates the impact of plasma activated water (PAW) on the polyphenolic content, antioxidant properties, and anti-nutrients of sweet orange peel powder. PAW treatment significantly increases the total phenol and flavonoid content, enhancing the antioxidant activities of the peel powder. Additionally, it reduces the levels of anti-nutrients such as tannins and phytic acid. The research highlights the potential of PAW as a non-thermal process for improving the quality and functional properties of orange peel powder, contributing to waste valorization and sustainable food practices.
