Abstract

This chapter delves into the intricate world of fat, oil, and grease (FOG) deposits, exploring how suspended solids influence their formation. Through systematic experiments, the study reveals that the weight of FOG deposits increases with flow velocity due to enhanced mixing. However, the presence of suspended sand significantly reduces the weight of FOG deposits at lower velocity gradients, an effect that diminishes as the gradient increases. The study also highlights the adhesive nature of palmitic acid-based solids compared to oleic acid-based ones. Additionally, it uncovers pronounced spatial variations in the percent saponification of FOG deposits, with higher values near the concrete surface. The chapter concludes by emphasizing the importance of understanding these formation mechanisms for effective sewer design and management, offering valuable insights for professionals in the field.
