Abstract

Lignin, the second most abundant biopolymer on Earth, is renowned for its complex phenolic structure and potent antioxidant properties. This chapter delves into the fundamental mechanisms of lignin's antioxidant activity, exploring how its hydroxyl and methoxy groups interact with reactive oxygen species to neutralize free radicals.
