Abstract

This chapter delves into the innovative use of microwave-assisted extraction (MAE) to obtain rice bran protein (RBP) for encapsulating γ-oryzanol, a bioactive compound found in rice bran. The study compares MAE with conventional alkaline extraction (CAE), revealing that MAE offers significant advantages such as higher reproducibility, reduced solvent consumption, and lower energy consumption. The extraction process is meticulously detailed, including the optimization of parameters like pH, temperature, and extraction time. The chapter also explores the solubility, foaming properties, and thermal characteristics of the extracted RBP, providing a comprehensive analysis of its suitability as a wall material for encapsulation. The encapsulation process and the resulting emulsion characteristics are thoroughly examined, highlighting the potential of MAE-extracted RBP in enhancing the stability and functionality of γ-oryzanol. The findings underscore the superior performance of MAE in producing high-quality RBP with enhanced properties, making it a promising method for industrial applications.
