Abstract

The chapter delves into the application of image processing in quality control for chocolate coating processes. It introduces a methodology for determining the mass of almond pieces and the homogeneity of almond spread on chocolate coatings. The study creates digital images of chocolate coatings with varying almond distributions and converts them into binary images using threshold-based segmentation. It then uses gray-level co-occurrence matrices to analyze the homogeneity of the almond spread. The chapter provides a comprehensive approach to evaluating food quality through image processing, offering valuable insights for professionals in the field.
