Abstract

This chapter delves into the emerging trend of rationalization in the food behavior of Polish consumers, highlighting significant shifts in consumption patterns and the underlying factors driving these changes. By analyzing household budget surveys and primary research data, the study identifies key aspects of rationalization, such as increased consumption of mineral water, fruit, and yogurts, and decreased intake of carbohydrates and potatoes. The research also reveals that age, education, income, and health awareness significantly influence the level of rationalization in consumers' diets. This chapter offers valuable insights into the evolving food consumption landscape in Poland, contributing to a deeper understanding of consumer behavior and its determinants.
