Zusammenfassung
In Diskussionen über gesunde Lebensstile wird immer wieder gefordert, die Verbraucher müssten schon frühzeitig besser aufgeklärt und umfänglich über Ernährung informiert werden. Es müsse ein „Wandel in den Köpfen der Konsumenten“ – weg vom billigen, fetten, zuckerhaltigen, ungesunden Essen hin zu einer ernährungsphysiologisch wertvollen, gesunden Ernährungsweise – stattfinden. Die Bemühungen vieler politischer und gesellschaftlicher Akteure gehen in der Tat dahin, Wissen, aber auch Einstellungen und Präferenzen von Konsumenten so zu verändern, dass diese gesünder leben. Doch bei aller Anstrengung sind die Erfolge der Politikinstrumente Verbraucherinformation, -aufklärung und -bildung gering und auch breit angelegte, gemeindebasierte und längerfristige Interventionsprogramme erleben meist nach anfänglichen Erfolgen herbe Rückschläge, erweisen sich also nur selten als nachhaltig. Die Frage ist, weshalb dies so ist, weshalb eine verbesserte Ernährungs- und Gesundheitsaufklärung nicht zu einem verbesserten Gesundheitsverhalten führt, und vor allem: welche konzeptionellen und instrumentellen Alternativen es für die Ernährungspolitik dann noch gibt.
