Zusammenfassung

Fucoidan wird aus Braunalgen und Echinodermen, am häufigsten aus Seegurken, extrahiert. Es handelt sich um ein Heteropolymer, dessen Hauptwiederholungseinheit Fucose ist. Allerdings sind auch eine Vielzahl von Monomeren und funktionellen Gruppen innerhalb der Polymerkette vorhanden. Der Anwesenheit von Sulfatgruppen werden viele seiner bioaktiven Eigenschaften zugeschrieben. Die Extrakte sind stark polydispers; daher sind oft zusätzliche Prozesse erforderlich, um Fucoidan mit einheitlichem Molekulargewicht zu erhalten. Das Molekulargewicht, der Sulfatierungsgrad und die monomere Einheit variieren erheblich je nach Art, Extraktionsmethode und Wachstumsparameter der Organismen. Diese Vielfalt von Fucoidan begrenzt auch seine pharmazeutischen und biomedizinischen Anwendungen. Dieses Kapitel diskutiert die Prozesse, die an der Fucoidanproduktion beteiligt sind, seine chemische Struktur, Umweltprobleme, die mit der Fucoidanproduktion verbunden sind, Anwendungen und industrielle Bedeutung.
