6. Carrageene

Zusammenfassung

Carrageene sind die sulfatierten Polysaccharide, die aus roten Algen gewonnen werden. Sie werden am häufigsten als Geliermittel eingesetzt. Sie bestehen aus wechselnden Disaccharideinheiten von 1,3-verknüpfter Beta-Galactose, die entweder mit 1,4-Alpha-Galactopyranose oder 3,6-Anhydrogalactose verknüpft ist. Sie werden je nach Grad der Sulfatierung als λ, κ, ι, ε, μ klassifiziert. Der Extraktionsprozess nutzt Alkali, Säuren und Salze und benötigt Energie für das Erhitzen und zusätzliche Prozesse zur Rückgewinnung und Reinigung von Carrageen aus Seetangbiomasse. Diese werden bei der Bewertung der Umweltauswirkungen der Carrageenproduktion berücksichtigt. Derzeit wird Carrageen häufiger wegen seiner rheologischen Eigenschaften als Geliermittel in Lebensmitteln und anderen Verbrauchsgütern verwendet. Einige Studien haben auch potenzielle Anwendungen als bioaktive Verbindung und in Komponenten von erneuerbaren Energiesystemen vorgestellt.
