Like in many countries of the Mediterranean Region, Olives and products made of olives also play an important role for the economic development and income generation of the West Bank. The climatic conditions are favourable for the cultivation of olive trees and it has been a traditional business of the local people since centuries. More than 90% of the olives are being processed locally to produce olive oil; therefore olive mills are located in almost every village of the region [8].
