Zusammenfassung

Alginate werden aus Braunalgen gewonnen, die hauptsächlich in marinen aquatischen Umgebungen vorkommen. Die chemische Struktur von Alginaten ist durch das Vorhandensein von Mannuronsäure- oder Guluronsäure-Wiederholeinheiten in abwechselnder oder blockartiger Form innerhalb der Polymerkette gekennzeichnet. Sie bilden einen Teil der Zellwand, wo sie der Zellwand Stärke und Flexibilität verleihen. Das Kapitel überprüft eine Reihe von verwendeten Extraktionsmethoden und diskutiert dann die Umweltauswirkungen des Extraktionsprozesses. Alginate finden Anwendung in einer Vielzahl von Branchen, einschließlich Lebensmittel, Biomedizin, Textilien und andere. Alginate können als eine der gut erforschten aquatischen Biopolymere bezeichnet werden.
