Abstract

Potato starch (PS) was triple-modified by a combination of debranching, carboxymethylation and sulfonation to improve some of its properties and enlarge its application for the various purposes. The results showed that the carboxymethylation and sulfonation were mainly completed on large particles produced by debranching. The debranching could obviously increase the blue value of starch, but the carboxymethylation had the opposite effect. After the original structure of PS was destroyed by debranching, the crystalline structure of sulfonated carboxymethyl debranched potato starch (SCDPS) was close to that of PS. The carboxymethylation and sulfonation enhanced the thermal stability of PS. The sulfonation and debranching reduced the onset decomposition temperature of PS, while the carboxymethylation enhanced the onset decomposition temperature. FTIR indicated that the characteristic peaks of C = O bonds was still at the wave numbers of 1741 cm−1, and the characteristic peaks of S = O bonds and S–O bonds were at the wave numbers of 1132 cm−1 and 618 cm−1, respectively. The adsorption capacity of SCDPS could reach 60 mg Cu2+/g.
